The best homemade hot cross buns, soft and tasty. Make them with or without fruit. Add some chocolate for a different flavor.
Ingredients
Buns

3 teaspoons quality yeast
-
1/2 cup (110g) caster sugar (superfine sugar)

1 1/2 cups (375ml) warm milk

4 1/4 cups (640g) bread flour

2 tsp g-fresh cinnamon ground
-
2 tsp g-fresh all spice
-
1/2 tsp g-fresh sea salt
-
1 1/2 cups (210g) sultanas OPTIONAL
-
1 - 2 oranges, zest only OPTIONAL
-
½ Cup Chocolate Chips OPTIONAL
-
50g / 3.5 tbsp unsalted butter, melted and cooled
-
1 egg , at room temperature
Extra Flour For Dough

1/4 cup (35g) Extra bread flour
Crosses

1/2 cup (75g) bread flour
-
5 tbsp water
-
¼ Tsp Yeast
-
G-fresh Vanilla Bean
Glaze

Maple syrup
Directions
Combine Dry Ingredients: In a large mixing bowl, add flour, yeast, sugar, allspice, cinnamon, and salt.
Incorporate Wet Ingredients: Add butter, milk, egg.
If using a stand mixer, add the dry ingredients, then the wet. Mix to a consistent soft dough, add a small amount of milk if too stiff. Allow to rise in a warm place until doubled. If using a bread maker, add the wet and then the dry ingredients. Set to dough only program.
Preheat your oven to 180 Celsius.
Place the dough on a floured surface and flatten, add fruit and or chocolate evenly on top and fold in. Work the dough into a long roll and cut or break into 12 even sections, roll and place in a tray. Allow to rise in a warm place until doubled in size.
Crosses. Mix flour, yeast, contents of vanilla pod and water to create a thick, runny paste. Transfer the paste to a piping bag fitted with a 3 mm round nozzle. Pipe in long runs - going across all the buns.
Bake the buns in the preheated oven for 15-22 minutes, or until they develop a deep golden-brown colour.
Once baked, remove the buns from the oven and transfer them to a cooling rack. Glaze while still hot, allow to cool slightly before serving.
